CIDER
Nearly all American ciders are made from eating apples. At The Cider Farm we organically grow English and French cider apples that, unlike eating apples, have tannins. These apples are only grown for alcoholic beverages. Our ciders have wine complexity, and pair well with food, but have half the alcohol of wine.
FAVORITES
Classic Dry – 6.3% ABV
A classic English-style cider made with 5 of our tannic English cider apples in a tart Liberty apple base. Complex with balanced acids and tannins and not too dry.
Oak Aged – 5.7% ABV
A balanced and smooth heritage apple blend aged in medium-toast American oak. Notes of vanilla, some say reminiscent of an oaked California chardonnay.
Equinox – 5.9% ABV
Subtle hint of hops on the nose and finish, but on the pallet, it has citrus and green grassy notes.
Cyser – 9.2% ABV
Apple juice and honey fermented together become cyser. Hives on The Cider Farm and other local farms provide the honey. A bit of unfermented honey yields a slight sweetness. Our highest ABV pour.
LIMITED RELEASE CIDERS
Rosé – 6.5% ABV
The Cider Farm’s rare, red-fleshed apples are combined with tart apples and a touch of elderberry rendering notes of strawberry, raspberry and lime on the aroma and palate.
Tremlett’s – 6.7% ABV
This cider features the tannic, tart Geneva Tremlett’s Bitter apple paired with an aromatic, sweet American apple, Priscilla. 0ur 2022 crop yielded notes of pome fruits, apple skin, lemon, and honeysuckle
Belgian Saison – 5.7% ABV
A cider true to the Belgian farmhouse saison-style, done with bitter orange peel, bergamot, star anise, and aromatic hops. Our most highly flavored and aromatic cider. Try this one last in a flight.
Dabinett – 5.7% ABV
The mildly tannic Dabinett apple is combined with our tart, sweet Liberty, and a bit of the more strongly tannic Chisel Jersey apples to yield a cider that is semi-dry, medium-bodied, crisp, and subtly floral.
All English – 5.6% ABV
A rare mix of eight tannic and tart English cider apples, with barely a touch of apple sweetness. Our fullest bodied cider with a wonderfully long finish.
Imperial – 10% ABV
A true ‘Imperial’. Similar apples to our All English—full-bodied with a turbo boost. This is a special-release cider not available in bottles.
THE CIDER FARM APPLE BRANDY
Our brandies are America’s only brandies made with tannic cider apples in the French tradition.
Aged 2 Years – 80 Proof
Aged 2 years in charred oak bourbon barrels with wild applewood from our farm. Slight char-whiskey note.
Aged 5 Years – 90 Proof
Aged 5 years in third use bourbon barrels with wild applewood from our farm. Complex and very smooth.
